INGREDIENTS:
-1 1/2 cup of oatmeal
-1 cup Maca ShopKarenBerrios
-½ tsp stevia or 4 tbsp extra panela
-Pinch of salt1/2 cup of non-dairy milk4 tbsp ground panela
-400g pumpkin puree
-1 cup of vegetable milk
-3 tbsp panela or mascabado + 1 tsp stevia *Use your favorite combination ofof sweeteners in the same amount.
-1 tsp aromatic spices ( ginger and cinnamon ) ShopKarenBerrios
-2 eggs
-1/3 cup Lucuma powder ShopKarenBerrios
PREPARATION:
1. In a bowl, mix the butter, panela, salt, milk, maca, and oatmeal.Pour the preparation on a baking sheet (spread a little coconut oil) to make iteasier for the cookie dough to come out and cook for approximately 10 minutes.Itshould be a thin and crisp cookie.
2. Next, we will need pumpkin puree, you need to cut your pumpkin and bake it for20 minutes both sides at 360F.Blend but without shell.In a bowl, beat two eggs, milk, lucuma flour, ginger and cinnamon with a handmixer.
3. Pour into cookie pan and bake 20-25 minutes at 360F. Let cool and cut.
Optional, we melt chocolate and bathe the pumpkin pie. Also, add cacao nibs.
