
NIKKI'S PUMPKIN CRUNCH CUPS
Ingredients:
Chocolate Crunch Layer:
- 1/2 cup Karen Berrios Cacao Powder
- 1/2 cup coconut oil
- 2 tbsp maple syrup
- 3/4 cup brown rice cereal
Pumpkin Layer:
- 1/2 cup pumpkin purée
- 2 tbsp maple syrup
- 3 tbsp vanilla spice sunflower butter (sub any nut/seed butter)
- 2 tbsp coconut oil
- 1 tsp pumpkin spice
Instructions:
- Mix all the ingredients together for the chocolate layer and use half to line bottom of silicone mold.
- Freeze while you make pumpkin layer.
- Mix all ingredients together in a bowl and pour over bottom layer of chocolate.
- Top with the rest of the chocolate mixture and freeze again till set.
