
Nicolette's maca cinnamon rolls
3 1/2 cups whole wheat flour
1/3 cup coconut sugar
1 tsp salt
1 1/2 tbsp Karen Berrios maca
2 tsp cinnamon
Yeast Mixture:
1/2 cup warm water
2 tsp coconut sugar
1 packet or 2 1/4 tsp dry active yeast
Wet:
1/3 cup melted coconut oil
1/2 cup almond milk
1 tsp vanilla
Cinnamon Center:
1/4 cup melted coconut oil
1/4 cup vegan butter
1/3 cup coconut sugar
2 tsp cinnamon
Glaze:
1/2 cup organic powdered sugar
2 tbsp almond milk
Directions: first whisk together yeast mix and let sit for 12-15 min to proof and rise + in a stand mixer, mix together dry ingredients + then being to add in wet + stop, and release mixer + add in yeast + then knead dough for 10 min using the hook attachment + grease a bowl + add in dough + cover with damp tea towel + then place in the oven with the light on for 60 minutes + remove from oven + transfer dough to floured surface + begin to roll into a long rectangle + smear over cinnamon mix + roll into a log + use dental floss to slice into 2 inch rolls + place rolls into greased dish + cover with damp towel and place back into oven to rise for an additional hour + remove from oven + preheat oven to 375 F + bake in oven for 20-25 minutes + let cool slightly + whisk together glaze ingredients + drizzle over rolls +enjoy my beautiful friends 💛
