
MAGGIE'S HOMEMADE VEGAN GF OREOS
Ingredients:
For the cookies:
- 2 cups almond flour
- 1/3 cup Karen Berrios Cacao Powder
- 1/4 cup sugar
- 4 tbsp vegan butter
- Dash of salt
- 2-3 tbsp vegan creamer
For the filling, beat together until smooth:
- 4 tbsp vegan butter
- ~1/2 cup powdered sugar
Instructions:

- In a large bowl mix together the almond flour, cocoa, sugar, and salt. Add the softened vegan butter and mix with a fork until combined. Add just enough vegan creamer to bring together the dough. Wrap the dough in parchment paper and chill for about 30 minutes to an hour.
- Once dough is chilled, take out of fridge and roll out between parchment paper into about 1/8 inch thickness. Cut circles using whatever you have (I used a mason jar lid to make them jumbo!)
- Preheat the oven to 350° F. Line a pan with parchment paper and place circles on pan. Bake for 10-15 minutes depending on how big you made the circles!
- Let cool completely before sandwiching with the filling!
