Vegan Pumpkin Nuggets

Ingredients:
-200 grams of pumpkin
-1/2 carrot
-1/2 white onion
-1 tablespoon of olive oil
-1 tbsp of chia seeds @shopkarenberrios
-1 teaspoon of ginger powder @shopkarenberrios
-1 teaspoon of curry
-salt and pepper to taste
- 3-4 tablespoons of almond flour or gluten-free oatmeal
Instructions:
1. Cook the pumpkin in the microwave for 8 minutes or steam it. We puree it and reserve it.
2. Chop the onion and grate the carrot.
3. Saute the chopped onion with olive oil and add ginger powder, salt, and curry.
4. Let it brown and mix with pumpkin puree and grated carrot, add pepper and salt to taste.
5. Then add the oatmeal or almond flour, form a homogeneous mass, and freeze it for 30 minutes.
6. Finally we form our nuggets and take them to the oven at 190'C until golden or air fryer 200'C for 20 to 30 min. You can also cook them with a little oil.
